  • 4 bell peppers (any color)
  • 1 cup quinoa

  • 1 cup cooked black beans

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish.
  2. Rinse quinoa under cold water and drain. In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15-20 minutes or until the liquid is absorbed and quinoa is tender.
